Carrot brownie with soy drink

A delicious temptation to enjoy a whim with the family, ideal for breakfast or afternoon snack, or to serve dessert with guests. The secret of its juiciness and flavour lies in the organic carrot, which also adds fibre and vitamins, creating an irresistible crumb with just the right amount of sweetness.

Ingredients. 300 g organic carrot, 250 g Fairglobe organic dark chocolate, 200 ml Bio Milbona soya drink, 3 organic eggs, 100 g Belbake cane brown sugar, 90 g Belbake organic wheat flour, 2 g Belbake pastry yeast, 2 g salt.

Elaboration. We start by peeling the carrots and chopping them. Cook for 20 minutes, drain, crush and set aside. Melt the chocolate in a bain-marie with the soya drink and in a separate bowl assemble the eggs with the sugar until they double in volume. Pour the melted chocolate over the eggs, beating gently little by little. Sift the flour, yeast and salt and add it to the dough, mixing it with enveloping movements. Finally, add the crushed carrot, mix and pour into a rectangular cake mould lined with baking paper. Bake for 30 minutes at 190 ºC and leave to cool before serving.

Three delicious organic rice

A colourful Chinese inspired dish, already classic in many homes and very much liked by children, which can also be sustainable thanks to Lidl’s Bioproducts, such as Bio Golden Sun long grain rice. Perfect as a starter, as a side dish or as a complete, nutritious dinner.

Ingredients. 420 ml of water, salt, Bio Golden Sun long-grain rice, 3 organic eggs, 100 g of traditional Dulano cooked ham, 150 g of Ocean Sea cooked Greenland prawns, 100 g of Freshona peas, 80 g of Freshona organic sweet corn, Bio Ilosone extra virgin olive oil.

Elaboration. Cook the rice in boiling salted water for 13 minutes and set aside. Beat the eggs separately with a pinch of salt, cook a French omelette and cut into portions, which we reserve. Wash, peel and dice the carrots. Sauté them in a frying pan with olive oil until they are lightly cooked. Add the prawns and sauté to brown. Cut the cooked ham into small cubes and add it to the sautéed ham together with the peas and corn. Slightly sauté, add the rice and tortilla, stir briefly and serve.

Chickpea salad with cucumber dressing

Elaboration. Start by cutting the cherry tomatoes in half and crush the feta cheese. Combine both ingredients with the drained chickpeas, add the corn and lamb’s lettuce and mix well. Finely chop the cucumber and the onion, mix them with the oil, the apple vinegar, the Provencal herbs and stir. Season and dress the salad with the vinaigrette. Serve and decorate with the seeds to taste.
